This delicious orange loaf cake recipe is the perfect addition to brunch, ladies afternoon tea, or getting together with friends.

I don’t think I’ve ever eaten a fruit or vegetable loaf that I haven’t loved. The local farmer’s market is my favorite place to purchase fresh loaf cakes made with vegetables. We love them for breakfast or brunch, but occasionally I like to bake a sweet one for after school too. I especially love a tangy citrus loaf because they are perfect for afternoon tea.

I love this simple Orange Loaf Cake recipe… and the best part is you can switch out the flavors by using lemon, lime, grapefruit, or mandarin instead of orange.

Ingredients

  • 2 cups all-purpose flour + 1 tbsp extra
  • 3/4 cup white sugar
  • 1 tbsp baking powder
  • pinch salt
  • 1 cup Planet Oat Original Oatmilk
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (softened) + 1 tsp
  • 1 tbsp orange zest
  • 2 tbsp orange juice (freshly squeezed)

Glaze

  • 1 cup confectioner's sugar
  • 2-3 tbsp orange juice (freshly squeezed)
  • zest from an orange

Instructions

  • Preheat the oven to 350F.
  • Grease a loaf pan with softened butter and flour, shaking off excess flour.
  • In a large bowl whisk together the flour, sugar, baking powder, and salt. Set aside.
  • In a smaller bowl beat together the butter, Planet Oat Original Oatmilk, eggs, vanilla extra, and orange juice.
  • Gradually pour the wet ingredients into the dry ingredients, beating together until combined and creamy.
  • Fold in the orange zest, then pour your batter into the loaf pan.
  • Bake for approximately 55-minutes.
  • Insert a wooden skewer into the center of the loaf to make sure it comes out clean, which indicates that it is baked through. Set aside to cool a little before turning it out onto a wire rack and letting it cool completely before topping with icing and more orange zest.
  • Once you are ready to ice your loaf, beat together the confectioner's sugar and fresh orange juice - you can add more or less orange juice if you don't have the desired consistency.
  • Gradually pour over your loaf, making sure you have a drip pan or parchment paper underneath, and then sprinkle the last of the orange zest over the top.
