My favorite way to enjoy butternut squash soup is with a grilled sandwich for dipping! Yum.

This soup, which combines chicken, white beans and corn with a few spices to make it warm and comforting, can be made in a slow cooker. It’s easy to make, reheats well and makes your house smell great when it’s cooking! The best part about slow cooker soups is that you can set them up before you go to work in the morning, let them simmer for 6-8 hours while you are gone all day long, then come home at night to dinner ready to eat.

We love serving ours with some garlic bread cubes on top or just on its own alongside salad or crusty bread with olive oil drizzled over top. Leftovers are great for lunch, too.
