How To Make Chicken And Dumplings (Step by Step)

Begin by placing chicken breasts and bouillon cubes in a large pot and cover with 2 quarts of water. I’m using bone-in, skin-on breasts here. But I’ve also used boneless/skinless breasts before too and they work just fine. Bring to a boil, reduce heat to medium and simmer for 20-25 mins until chicken is done. If you’re using the boneless/skinless breasts, they’ll probably be done much quicker, like after 10-15 mins.

How to Boil Eggs

Meanwhile, boil the eggs. I know there’s tons of different theories on how to boil an egg, but here’s what works best for me: I put the eggs in the bottom of a small pot, cover with water, bring to a boil and boil for 10 mins. After exactly 10 mins, I remove immediately from the heat, pour out the hot water and cover the eggs with cold water to stop the cooking. This keeps the yolk from turning green.

For dumplings, 🌾 all-purpose flour 🌾 is typically the best type to use. It has a moderate protein content, which gives the dumplings a tender and soft texture. 🍴 If you want a slightly denser dumpling, you can use 🌾 cake flour 🌾 or 🌾 self-rising flour 🌾, which have lower protein contents.

If it's boiling too hard, the dumpling dough can fall apart. Simmering broth might not be hot enough to raise the dumpling dough. Remove or tilt the lid after they've cooked so the dumplings don't over-steam and get soggy and dense. At least, that's the way I was taught and dumplings come out fluffy and delicious.

Do you cook dumplings with lid on or lid off? ›

Once your water is boiling, let your dumplings cook in the steam for about ten minutes. Don't remove the lid as letting the steam escape will disrupt the cooking process and result in undercooked dumplings, so keep that lid on!

Why do my dumplings fall apart when I cook them? ›

Homemade dumplings can fall apart for a number of different reasons, or any combination of them. Often they burst during cooking because they have too much filling for the amount of dough. Some doughs are too dry, so the dumplings won't stay sealed. Others can be too wet and sticky and end up tearing.

Why did my Bisquick dumplings disintegrate? ›

The dumplings need to hit the boiling liquid for the initial cook, but then the temperature needs to drop so that the simmering liquid doesn't disturb the dumplings so much that they fall apart. It's also important to make sure that the ratio of milk to Bisquick is correct.

How do you know when drop dumplings are done? ›

To make sure a dumpling is done cooking, pierce it with a fork or toothpick. You'll know it's done when the fork or toothpick comes out clean.

Are dumplings supposed to float in chicken and dumplings? ›

Can I use 2 year old Bisquick? ›

While unopened Bisquick can typically be safe to use for up to one year past its printed date, signs of spoilage include an off smell, clumpiness, or a change in texture which indicates that the mix has absorbed moisture or the fats within have turned rancid.

Are dumplings better in the oven or slow cooker? ›

Slow cookers are perfect for cooking dumplings. If you like a crispy top many crock-pots are suitable for use in the oven (check your manufacturer's handbook!) so you can crisp them up in there for 10-15 minutes after they've cooked through in the slow cooker.

How do you make chicken and dumplings not stick? ›

If they are homemade fresh dumplings, just as making breads, a few pitches of flour or corn powder will prevent them to stick together. If those are frozen dumplings, don't use hot water to boil them, out the dumplings in a pot of cold water and then heating them up, then they won't stick.

What keeps dumplings from falling apart? ›
