  1. In a large bowl, combine the cucumber, avocado, and red onion. Stir until the avocado begins to soften.

Skinny Avocado Ranch Pasta Salad

INGREDIENTS

  • ½ small Red Onion finely chopped

  • 1 ½ cups fresh corn or defrosted frozen corn kernels

  • 1 Avocado diced

  • 1 cup ranch dressing of your choice

INSTRUCTIONS

1) Cook pasta until tender, but just slightly underdone. While pasta cooks, place chopped red onion and corn kernels in the bottom of a strainer. Once the pasta has just finished cooking, pour the boiling water over the onion and corn through the strainer, and strain the cooked pasta. Place the drained pasta, onion, and corn in a large bowl and allow to cool.

2) Add all remaining ingredients to the pasta mixture, and gently toss to combine.

3) In a smaller separate bowl, stir together skinny ranch dressing. Fold the dressing into the pasta salad.

  2. Blend it until smooth.

  3. Check the consistency, if it’s too thick then add 1 tablespoon of water at a time, blend, and see if it needs more or not.

Roast the Chickpeas

  1. Toss the chickpeas in the olive oil, za’atar seasoning, and a little salt & pepper

  2. Spread onto a line baking tin and roast for 40 minutes at 170C/ 325F/ GM3 for 30-40 minutes, turning frequently until golden and crispy

Make the Sandwich

  1. Share the beetroot hummus across both slices of bread and spread it out with a knife

  2. Chop the avocado and lay it across one slice of bread

  3. Scatter a large handful of the cooled chickpeas over the avocado and top with a little salad cress plus the za’atar (if using)

No Churn Avocado Ice Cream

  1. In a blender add Avocado and condensed milk.

  2. Blend them on high speed until it forms into a smooth mixture without any chunks of Avocado.

  3. Transfer the avocado mixture into a mixing bowl.

  4. Take another bowl and add the fresh double cream and using electric hand mixer beat on low-medium speed until it reaches thick, stiff peaks. Don’t beat too much otherwise, it will split.

  5. Now slowly fold the whipped cream in batches to the avocado mixture until everything is combined well.

  6. Transfer the mixture into an airtight container and freeze this ice cream for at least 6-8 hours or preferably overnight.

  2. First, cut the avocado in half and then take out the seed. Now, scoop out some of the avocado flesh, making an indent for the egg.

  3. Place avocado on a plate or board. Crack 1 egg into each avocado half. Some of the egg white might come out because the indent is too small, don’t worry about that, don’t try to get into the avocado.

  4. Place the avocados in a smaller baking dish. The smaller, the better because we want to make sure that our avocados don’t tip over while baking.

  • ½ cup Tomato pulp and seed removed and finely chopped

  • 2 Serrano chilies finely chopped

  3. Using a fork start mashing the avocados. If making a bigger batch then use a potato masher. Stop mashing when it is still a little chunky (not fully mashed).

  4. Add finely chopped onion, tomato, cilantro, and serrano peppers along with salt, pepper, and ground cumin. Add freshly squeezed lime juice.

  3. In a different bowl, add the Tortilla chips and crush them up.

  5. Place the air fryer basket inside the Instant Pot and spray the bottom of the basket with oil.
